First soak sundried tomatoes in olive oil or water. You can also soak the onion in water for a while and rinse to diminish the intensity of onion flavor.
Mix all the ingredients in a bowl and enjoy.
NOTE: The cooked version is supposed to be eaten with chapati (a thin whole wheat bread) or over bastmati rice. Try it with Essene bread.

3 cups okra, thinly cut
3 cups sundried tomatoes, small thin squares
1 onion, finely chopped
1 teaspoon giner, smashed or minced
1 teaspoon garlic, minced
1 1/2 teaspoon chilli powder
1 teaspoon of each spice: garam masala, tumeric, cumin powder, coriander powder,
1/4 cup olive oil
salt to taste
