Just a few options, but great food - Edit
With the complete lack of vegan options in Diamantina, a buffet is as good as it gets if you want to go out for lunch. Apocalipse is a beautiful restaurant in the city center, located in a historical building with a nice view. The options offered change daily and are available for you to check before entering the restaurant. They have a list of vegetarian options, and some of them are vegan. In any case, there is always rice, beans, and a variety of salads. So you can always put together a healthy and balanced dish, even if it's not a very creative one. The food I got was really tasty, I was overall pretty satisfied with my meal. It's pay-per-weight and I found it a bit expensive, but Diamantina is an expensive town in general so not surprising. They usually have fruit desserts that are vegan, as is the guava jam.
