Very little choice, but good - Edit
The only concrete option was a vegan brownie. We were lucky enough to find a truffle too. Attention: the tahini biscuit that was proposed to us as a vegan, actually contained honey. The choice, even omnivorous, is contained. However, the products are excellent.

Surprised to find vegan options - Edit
I took a chance and walked into this shop and was pleasantly surprised to find a few different vegan sweet options including a brownie and cookies! There were gluten free options as well. I tried the vegan avocado brownie for 5.50 BGN but did not enjoy it, it was rock hard and had no flavor. The shop is around the corner from Edgy Veggy restaurant which has vegan desserts so if that’s what you’re looking for I’d say go there instead.
