Serves meat, vegan options available. Farm to table taqueria in downtown located in the 1950's style former Oasis Diner. Vegan cheese available. Black beans, pinto, and refried beans are fully vegan per management. Guacamole is vegan. Vegan menu choices can be ordered as either a burrito, bowl, or tacos, with an option to add vegan cheese. Other options can be veganized. Fully vegan choices are the camote (sweet potatoes, braised kale, guajillo salsa, pepitas) and tres hermanas (corn, zucchini, pinto beans, pico de gallo). Also serves margaritas. Open Mon-Sun 11:30am-10:00pm.

Vegan friendly - Edit
I checked out El Cortijio after learning they offered vegan cheese. Before dining, i reached out online to management to be sure that the beans and guac were animal-free and they confirmed for me that they are vegan. I ordered the Camote burrito and added vegan cheese. Really good flavor and very filling. I wish they had added more vegan cheese shreds as it was a little sparse. The chips and guacamole were very good, although it seems that they drizzle olive oil on top (like you would for hummus?) which was fine but I found it odd and unnecessary. The chips were warm so I assume made in-house. I ordered the margarita special (passionfruit) - it was fine but I won't likely order again as I don't think it was worth $14 for a small drink that mostly tasted like passionfruit juice rather than a margarita. I look forward to going back and trying other options.
