A dessert to cook on an open fire.
1: Cut some large pieces of aluminium foil (one per person). The foil should be able to completely cover the banana and ensure no liquid can seep out from the bottom
2. Put the banana in the centre of the foil, sprinkle on the sugar and cover in rum.
3. Wrap the parcel so that the liquid does not leak out of the bottom and put straight onto the the hot coals/wood of the fire.
4. Cook for 8-15 minutes (depending on the heat of the fire). The rum should bubble and mostly boil off.
5. Take the bananas out of the fire, they should be caramelised and golden brown- if not, put them back on the fire for a bit longer.
6. Add your topping of choice, vegan ice cream or vegan cream!
