Instructions
-Mix the dry ingredidents in a bowl.
-In another bowl, mix the milk ,oil ,lemon juice (or vinegar), zest , vanilla and let it sit to curdle.
-Whisk with a mixer until the aquafaba and sugar has stiff peaks.
-Combine the dry mix and the milk mix with a whisk, dont overmix. It's okay to have some lumps.
-Add the foamed aquafaba and fold with a spatula ,carefully, until well combined.
-Cook in a non stick pan.
-Top with vegan butter and syrup of your choice.
