In a large bowl, mix all of the dry ingredients (flour, baking powder, sugar, salt).
In a separate bowl pour in milk. Add vinegar, and whisk until well mixed. Let sit for 10 minutes until the mixed substance looks bubbly/thicker.
Then pour wet mixture into the dry ingredients.
Add vanilla extract. Add slightly liquid-y coconut oil (warm it to melt).
Mix in optional vegan chocolate chips or fruit into the mixture, or leave plain.
Turn on stove. Spray a bit of oil onto the pan or melt some coconut oil onto the pan, then spread around with a spatula.
Spoon out batter and start cooking the pancakes. Be careful when flipping your pancakes. Flip the one side over when the bubbles have stopped forming as in opening and closing. Wait until other side of the pancake is cooked.
