Vegan Spanish Omelette

    Instructions

    Peel and chop the onion and potatoes into small pieces.
    In a pan fry the potatoes with the onions.
    While the potatoes are cooking mix the chickpea flour, water and salt together. You can add a bit of turmeric or nutritional yeast as well.
    Mix the cooked potatoes with the egg mixture you made and heat a pan with a little bit of oil. Pour the omelette mixture into the pan and cook one side and then flip and cook the other side until your desired texture.
    Serve and enjoy!

    2 cup chickpea flour
    2 cup water
    1 small onion
    2 big potatoes
    Kala namak salt, to taste
    Oil, to taste
    Turmeric, optional
    Nutritional yeast, optional
