Preheat the oven to 400F.
Drizzle the cut sides of the zucchini with olive oil
Place on a parchment lined baking sheet until soft and charred (about 30-45 minutes)
Remove form the oven and place the roasted zucchini in a strainer and allow to cool and drain any excess liquid.
In a food processor combine cooked zucchini, garlic, tahini, lemon, salt.
Garnish with paprika.
