Quinoa with Spinach and Baba Ghanouj

    Cook quinoa by measuring water 1 cup grain to 2 cups water. Place quinoa and water inside a medium size cooking pot. Bring water to boil, and reduce heat to low. Keep covered and let cook for 10 minutes.
    Pile washed spinach to top of quinoa, and close lid. Shut heat. Spinach will soften.
    Spoon content into 2 bowls, add to each bowl a few spoonful of baba ghanouj. Enjoy.

    1 cup quinoa
    1 bunch fresh spinach or 1 bag baby spinach
    1 tub baba ghanouj, ready made
