1. Once you have soaked the walnuts, drain the water and add them to a food processor. Add the rest of the ingredients and pulse until the mixture achieves a "ground meat texture", stop to scrape down the sides as needed.
2. Cook in a skillet, oven or your favorite method of heating meat alternatives until desired temperature is reached. You can use this walnut meat on everything! and anything.Try it in pasta, on salads, or in tacos!
3. Leftovers can be stored in an air-tight container in the fridge for up to a week.

Ingredients
2 cups raw walnuts, soaked in cool water for about 20 min.
2 cloves garlic, minced
1/4 cup yellow onion, minced
1/4 cup soy sauce
2 tbsp olive oil
2 tbsp nutritional yeast
1 tbsp dried oregano
2 tsp ground cumin
1 tsp cayenne pepper (optional if you don't like the kick maybe try chipotle or something smokier)
