A stand at the night market located in front of a candy store that sells garlic chive dumplings (Guichai - กุ้ยช่าย), either crispy fried or steamed. Open Tue-Sun 5:30pm-9:00pm.

We were doing a tour that stopped at the night market, as none of the usual options were vegan our guide hunted down this stand that sells Crispy Garlic Chive Dumplings (Guichai Tod).
We verified there and online, turns out they are fully vegan! The dumplings are crispy on the outside and soft on the inside, they are reminiscent of spinach dumplings.
Would recommend if walking the night market and looking for some vegan bites!

But we tried it. 60 baht for a handful size portion. Good as a snack. Very very fried and oily but pretty tasty. They add soy sauce on top if you want
