Nice bun & veggie don - Edit
I didn't try the ramen because I was hesitant after reading others' reviews of it. Instead, I had the Hirata Bun (order it without mayonnaise) and the Veggie Don, which are more like starters but filling enough for a lunch if you get both. I really enjoyed these, very flavourful and the portion of vegetables in the Don was generous. Would go back for either of these😄

Vegan ramen with homemade noodles - Edit
On the menu there are three veggie options that are in fact marked as "vegetarian". First two are starters: a veggie bun and a tofu salad. We came for the ramen that is for 14 EUR and it comes without the egg (that would be for 2€ extra). At first we were told that the ramen is vegetarian, not vegan. After double checking in the kitchen we were assured it was vegan. The staff's english is limited. The place is extremely popular, we went for a dinner and waited in a line outside for at least a half an hour. The ramen is good, especially the homemade soba noodles. The toppings include mashrooms, beetroot, fennel, zuccini, chickpeas and valerian salad which was unusual just as the taste of the ramen. It was quite salty and oily and the broth didn't taste as ramen does. But I liked it a lot. The edamame for 5 € were great too.

Vegan ramen - Edit
Ramen tasted very good, but not exactly like other veg ramen I’m used to from other places. But I liked it anyway. Try it for yourself. Sauted edamame were delicious.

Not quite sure about the ramen - Edit
I took their vegetarian ramen. The broth was light but still savoury and I liked that their homemade noodles was coloured. The soup contained different vegetables including beets and paprika. I am accustomed to heavier ramen with thick broth, lot of umami and toppings. This variant felt more like a autumn soup with a japanese twist. I might be wrong, and there is similar ramen somewhere in Japan. I guess I’ll have to go and see for myself.
