Have non spicy sauces and vegan cheese.
Replace eggs and chicken with tofu. They offer several vegetarian options.
Serve nice bread for Mexico (I'm French).
I tried the tofu vegan enchiladas (I mixed names on the picture) with salsa de la casa. Nothing incredible, but it was ok.
The waiter was very helpful. I will go back to try another dish since there are very few options for vegan in the neighborhood.
