Definitely not the place for an ethical vegan - Edit
Vegan and vegetarian options had the same symbol. A giant fridge filled with large chunks of animal carcass directly in the doorway. I was unable to eat here because the glorification of meat made me sick. Perhaps for plant-based people less of an issue, but it definitely didn’t work for me.

A few vegan options, but not the best - Edit
Mattacena’s menu uses the same symbol for vegan and vegetarian, so it was a little difficult to figure out what we could and could not eat. Their chef makes fresh pasta was eggs, so most of the pasta dishes are not vegan aside from a spaghetti dish that specified “dried pasta,” the gnocchi, and the risotto (which you would have to order without the Gorgonzola, which our waitress said would probably not be good), and a vegetable tortino. I got the gnocchi which was fine, but not the most flavorful. They do have an English menu, which was helpful. The staff was also very friendly!

Vegan options included a few pastas - one with mushrooms and gnocchi with broccoli and butternut squash. The gnocchi was the tastiest. There were also a few vegan side dishes e.g. Beans

We had pasta with mushrooms and ribollita.
Portions for 1 are HUGE, I strongly advise to get half a portion.

Clearly marked vegan options on the menu. Avoid the 'vegan tortano' as this was vegetarian and resembled a supermarket veggie burger with a broccoli and dairy cheese bake. Would love to try other traditional Tuscan dishes such as the porcini mushroom pasta. Lovely atmosphere and setting

Really enjoyed the food- there was a good mix of traditional Tuscan cuisine with some stuff that pushed the boundaries a bit. I went with someone who is non vegan and she had a vegan starter (the ribollita) which was great. I had the black cabbage pesto pasta which was tasty but the pasta wasn’t fresh (some restaurants make fresh vegan pasta in Florence) and the pie which was tasty!

Good Tuscan Cuisine - Edit
Traditional Tuscan cuisine with fresh ingredients, vegan and vegetarian items are clearly marked on menu. The carpaccio di zucchini was great, and the vegan tortino was unique and different from the usual Italian fare.
