Tasty, Fast & Affordable! - Edit
Pho Minh is a tiny shop in Pacific Beach with only a few tables. There is a vegetarian section of the menu, and it offers a couple of options that are vegan or easily veganizable. I ordered the pho, and it was really good! It was loaded with veggies, the broth was tasty, and for San Diego, it was affordable. The service was fast, and they have a small parking lot, which made it nice to not have to search for parking in the area on a Saturday night.
