It was a pleasant surprise to relax here. The food was delicious, and the atmosphere was wonderful. This is a semi-upscale vegan Japanese restaurant in Ho Chi Minh City. They assured me that it is vegan, no dairy, eggs or butter is used in their premises. 😅 The menu contained very little info in English, so I used Google Translate for every page to learn about the dishes and ingredients and make an informed choice. Fortunately, the server spoke a little English and was very helpful. The BEST part is the presentation: A live culinary performance featuring dry ice and plant-based (vegan) sashimi involves a chef arranging realistic, plant-based slices—such as konjac-based squid or carrot-based salmon—on a chilled platter, surrounding them with solid carbon dioxide, and pouring warm water to trigger dramatic, cascading white fog. I enjoyed witnessing the process of dry ice sublimation. Not only Vietnam of course but this is the LAST place in the world where it is so affordable that anyone can enjoy it.
