Excellent little place - Edit
The restaurant is tiny, with only three tables, and it seems like the one, very kind lady is running it solo, but she turns around the food pretty quick. Has a very hale vegan separate menu, with faux chicken and beef options as well was tofu and vegan cheese and crema. Food is very tasty. Well worth the trip.

Cute Mexican place with separate vegan menu - Edit
We went for an early dinner at Sol of Mexico after visiting Clark University. It's about a 4-minute drive from the school. The restaurant is tiny - only a few tables - but very cute and cozy. My child and I ordered from the vegan menu (tofu quesadilla and the taco mix with tofu, chicken, and beef tacos with beans and rice). My spouse ordered meat tacos from the regular menu. The service took time, but the owner makes everything fresh in the back. The tacos were great - especially the chicken and tofus ones. There were many other options on the vegan menu that looked delicious. They also have a hibiscus "protein" option, which is intriguing. My spouse liked his meat tacos as well. Highly recommend this place.

I’m surprised I hadn’t heard of this place until now! While they do offer a full non-vegan menu, they also have a completely separate vegan menu with so, so, so many options. Everything we tried was absolutely delicious. My parents ordered from the regular menu and thought their food was incredibly tasty too. It’s currently BYOB, but beer and wine are apparently coming soon. The owner was super sweet, and while there are only a few tables inside (and a couple outside), the authentic Mexico vibe was great. Can’t wait to go back!

When we arrived, the owner greeted us and asked if we would like a vegan or non-vegan menu. They had a long list of options that included veggie as well as tofu and meat substitute items (e.g., beyond beef). I got the mesquite tofu enchiladas with green sauce and my partner got 3 tacos a la carte. He said he didn’t really like the vegan chicken flavor but others were good. Please go and give them business!

I loved it! As I’m sure some of you can relate, it’s sometimes hard to find a place that serves both vegan and non vegan dishes where the vegan options are actually tasty. This quesadilla was so yummy. I got it with the mesquite tofu, it wasn’t overstuffed like some other quesadillas I’ve had. It was, in my opinion, perfect *chefs kiss*

I love that they’ve veganized many traditional Mexican dishes beyond the typical bean burrito minus the cheese. They have vegan cheese options as well as mock meat, or seasoned tofu. Flavorful and authentic. I would rate five stars but the app won’t let me.

Huge vegan menu. MANY gluten free options as well. My wife is vegan and GF, which can be challenging when eating out. Not here!

Love, love, love. My husband and I loved everything! We got the Sobe, tostada, pulled pork taco special and the burrito (all vegan, of course) and everything was excellent! So flavorful and filling! I can't tell you how happy I am that we found this place (through the Happy Cow app). We will definitely be returning very soon. Oh and the person who worked there was amazing. She was so helpful and absolutely lovely. ❤️ (I wonder if she is the owner 🤷♀️)

It won't let me do 5 stars because it's not just vegan food but with a vegan menu this big and this delicious, I think they should allow 5 stars. This place is 5 stars in my heart. 😉

This place is going above and beyond to make sure that there’s a vegan option for every non vegan counterpart. In fact, the owner partnered with a local vegan establishment to better understand veganism and make sure they knew exactly what types of ingredients to avoid for vegan food! And boy have they hit the nail on the head!
