Caution - Edit
Before I explain, note that the mayo is NOT vegan! I walked up to the cart being closed up, despite online saying they were open. I decided to just stay and study the menu, and eventually, a woman came over and said only #1 or #4. I said 4 and asked if it was vegan. She said yes, vegan, yes yes. I said okay. I then asked again, if she was sure? Again, yes, yes, vegan. Then, a chef came over, and I stopped them and asked that it is indeed vegan. They said yes. Then a guy came over to ask me a question, and I told him I just wanted to make sure it's vegan. He says yes, everything vegan. I said okay because I was mainly concerned about the mayo. He then says oh the mayo is egg. I said what? I said vegan and was told it's vegan. He says no, it has egg, so I don't want egg? I said no, vegan. No egg. He then told the chef no mayo. Wow! So yeah, I wouldn't be surprised if they sealed the egg rolls with actual egg as well. I've encountered this exact scenario elsewhere too with saying it's fine cuz it's just egg. *face palm. Despite the giant banner outside that says vegan and everyone there saying it's vegan, just make sure you cover all your bases of possible animal products and tell them none of it. Eggs, butter, whatever else! Now, on to the actual food. For $6, it is what it is, but it was pretty sad, to be honest. Mainly bread, there was no joke, 3 pieces of carrot shreds. Three. You could actually count them out. Everything about it was pretty bland. I will definitely be skipping this place.

Thanks. I tried to go there and the cart was "open" but no one in it. No bell to ring, no phone number to call... I waited about 10 minutes and just gave up. If they are advertising "vegan" when it's not I'll just skip it altogether though.

Banh Mi Bargain - Edit
I ordered the #4 banh mi without cilantro, which includes Vietnamese ham, pickled carrots, cucumber, and pepper. It's more bread than fillings, but still a great deal for $5.

Holy cannoli, soooo good. $4 for the best Banh Mi I’ve ever had. Juicy, flavorful, filling, and inexpensive. I’m drooling thinking about it right now. I wonder if I could pay her to park in my driveway... super nice lady, great food. Check this place out.

Super nice lady who runs the cart. The food was amazing. Banh mi is "meaty", fresh with pickled veges and cilantro as well as crisp and crunchy bread.

Good, inexpensive sandwiches - Edit
I've had a few sandwiches from here that I've really enjoyed, and for $4, you can't beat it! I've also tried a few stir fries which were ok. There is a bit of a language barrier with the family who owns the cart so figuring out what is vegan can be a little bit difficult (depending on who is working).
