The go-to bakery for Vegan and Gluten free in Paris - Edit
Yes, you read that right. As of this writing, Copains offers 10 vegan/gluten free breads! They also have pastries and cookies as well. Copains has several branches in the city. Worth a visit!

Sandwich was dry and tasteless - Edit
I got a Sandwich Samuel (vegan) and was pretty disappointed. The bread was very dry and the sandwich didn't have much flavour.
