Across from by Carnegie Hall - Edit
This place is ideal for those looking for a relatively healthy, quick bite before going to Carnegie Hall (which is right across the street)--not ideal for a relaxing meal, mind you, but for a quick bite that is reasonably priced. They have a bunch of vegan options, including sandwiches, soups, bowls, and salads. You order at the counter, and there are a bunch of seats inside, as well as a small park next to diner between B'way and 7th if you want to eat outdoors.

Plenty of vegan options - Edit
Lots of salads and nibbles and they even have a vegan grilled cheese sandwich as an option. (Highly recommended - comes packed with avocado, beans and salsa with some vegan grated cheese). They have an impossible meatball sub (vegetarian) too.

Fresh, fast and delicious - Edit
There were a couple of great vegan options, salads and a vegan grilled cheese sandwich, plus you can create your own salad. Everything made up fresh in front of you and all tasted great. The cold coffee is great too.
