Amazing Chef makes Vegan Food in Beautiful Traditional Building - Edit
UPDATE (April, 2023): The chef has been developing more and more delicious vegan food. Recently he added a new Vegan Katsu Set to the regular menu and is even promoting it on Instagram to his regular customers! I was very excited to see this, because oftentimes vegan options are not promoted and are hidden in the menu (or not included at all). I LOVE this restaurant - the food is amazing, the chef is so nice, and the atmosphere is great. Highly, highly recommended!!

This restaurant has been in business for around 40 years and is a very popular restaurant in town. The chef is very friendly and eager to accommodate customers. In late 2022, he started experimenting with cooking vegan food. Now, there are several vegan options on the menu including tempura and soba (the dashi is different for vegans, so make sure to tell him you are vegan when ordering) and even a Vegan Full Course Meal (available by advance reservation) which includes various dishes such as vegan sushi, vegan unagi, vegan yuurinchi, tempura, and many more. The chef is still experimenting with new ideas and is planning to expand vegan options in the future. I recommend making a reservation in advance and telling him you are vegan. He will prepare many options for you! One of the best restaurants I have been to in Aomori Prefecture.
