Worth revisiting! - Edit
This is my third time here in 4 months. As one reviewer said, it is not a noodle stand but based on that idea. It’s a small, casual place with only 2 delicious main dishes. Even with only two items, I still have trouble deciding. But I think the red spicy umami is my fave. Despite the comments of another reviewer that the staff aren’t friendly to foreigners, I have found it to be the opposite.

You may be put off by the name of the restaurant. It is not an actual stand, it is an excellent (but moderately sized) restaurant. It is vegan and has effectively two dishes with instructions on how the dish shoule be eaten. The two dishes that are offered are either spicy or not spicy. I had the spicy dish and loved it (mildly spicy). Fully recommend. Go there!

Amazing noodles - Edit
This was honestly just such an amazing spot. In this whole region it is quite difficult to find good vegan food options, so we were pleasently surprised by finding a completely vegan place in the centre of Matsumoto. They serve two kinds of noodles and you should definitely try both of them. We preferred the sesame version but both of them are delicious. The only downside might be that they are only open for dinner, so we could not go there for lunch as well.

Two dishes done REALLY well - Edit
Two variations on soupless Tan Tan noodles - an amazing black sesame version, and the also amazing spicy miso version. The sauce is fantastic, and the toppings go well. I ordered the 150% noodle version of each and shared with someone else. We left very satisfied and planning on coming back the next day. Pretty well much perfect.

I enjoyed diverse flavours, it is surprisingly delicious, and all plant-based by the way. Would recommend this place to all people, including vegans, vegetarians and non-veg.
