Form over flavour. The food was just bad. - Edit
We had two starters, two mains and drinks. All dishes looked good and for 3/4 that's where the positive impression ended.

The Arancinetti was good. 4/5
The "salmon tartare" was a piece of dough with a thick layer of cream cheese and a single slice of "salmon" on top. Such proportions are overall ok but not for a dish marketed as "tartare". The salmon looked and tasted like any store-bought pre-sliced vegan salmon alternative. The cream was ok. The dough was soggy, the flavour was off, and quite frankly it did not seem too fresh. The balance in the whole dish was off. 2.5/5
The mains:
The shroom pasta: The pasta was noticeably overcooked. The flavours were very unbalanced. The oil pearls looked interesting, but upon eating resulted in sudden bursts of intense oil flavour that overpowered everything else. 1/5
The risotto: The risotto was severely oversalted. The rice felt overcooked. 0/5
When your whole business revolves around preparing food, not overcooking or oversalting your dishes is the bare minimum.
The service was ok. Average for some countries, below average compared to the rest of our experiences in Spain.

Para nosotros es visita obligatoria cada vez que vamos a Madrid. Pizzas buenísimas, difícil de escoger porque hay mucha variedad y todas están muy buenas. Postres espectaculares (dejaros un hueco si o si para el postre). La atención por parte del personal también muy buena y amable.

I'm glad we shared several dishes to try some of the best on offer at Choose. I liked that the mini aranchini balls came in 4 flavors with corresponding sauces (the salmon was a favorite), the cheese plate (loved the cracked pepper one), 2 types of pasta (pistachio and mushroom/truffle -- the mushroom one was perfect and I would have loved more sausage in it as it complimented it well). The pizza was the only thing that fell a bit flat, mainly because of the type of cheese they used. It was gooey and heavy, causing the pizza to fall apart in the middle. Seemed like that industrial store-bought stuff.

Pedimos de entrante una pizza affumicata muy rica y nada pesada, y dos platos de Pacheri funghi y pacheri pistacchio. Los Dos muy ricos, aunque el funghi le gana al pistacchio. De postre un tiramisú y una panacota. Ricos y contundentes y generosos. Los postres son grandes. En general un pelín caro pero para volver. Las cosas claras.

Please please go here, this was my FAVOURITE meal in Madrid!! We ordered sangria, the arancini plate, the truffle pasta, pistachio ham pizza, chicken asparagus main, tiramisu and cheesecake. Everything was phenomenal. I was blown away at the first bite til the last. Arancini was creamy, flavourful and the different flavour offerings made it fun to share. The pasta was perfectly Al dente and was so mushroomy. The chicken main was NOTHING like I've ever had before and reminds me of chicken I used to eat as an omni. Don't even get me started on how silky and luscious the cheesecake and tiramisu was. I should also mention the restaurant is beautiful and has elegant seating arrangements. Our group was seated in a cosy, intimate nook with a circle table making it easy to have conversation and share everything. Absolutely gorgeous food, ambiance and service. Don't sleep on this place!!!

I'll try to put into words how incredibly good this place is. As a dinning experience, this was by far the best meal we had in Madrid. The place is elegant, sober, and cozy. We had a table near the kitchen so I had the extra pleasure of speaking to the chef and cook, who were Italian. I also saw how carefully they plated each dish, with great attention to detail.
Read moreNow, the food. This was the BEST pasta dish I've ever had. I had the paccheri funghi e tartufo. The flavours were so intense and well mixed. I can't describe it, you have to try it. We also tried the mortadella pizza, which was amazing. The creaminess and cheesiness made it outstanding. For starters, we had the arancinetti, which we thought was the best introduction to the restaurant and their flavours (pesto, smoked ham, bolognese, truffle). All of them were delicious. For desert, I chose the caramel cheesecake, the size of which was surprising. It was a very big portion, super rich and, obviously, otherworldly.
The price is high, but it's absolutely worth it. The service was excellent at all times. I'm dying to come again in my next Madrid visit.

Me encanta, es el sitio al que llevaría a todo el mundo. He comido muchas veces allí y todavía no he probado nada que no me haya parecido increíblemente delicioso. Todo lo que probamos es espectacular. Los Arancinetti son una maravilla, y la pasta Paccheri al pistacchio y Paccheri funghi estaba buenísima. De postre pedimos un Tiramisú y un Cheesecake de caramelo, que también estaban a cada cual más rico. Tanto el lugar como el personal es excelente, un planazo redondo.
