The Dream Ramen Spot

I had to pinch myself. Could our neighborhood’s new really good ramen spot be real? We recently lost Luanne’s Wild Ginger, so our neighborhood had an affordable Asian cuisine hole. Redwhite boneless fills it and then builds massively on top of it. The vibes, flavors, price, and hours were in incredible harmony.

We found ourselves trying it for the first time when everywhere else was closed. In retrospect, we are glad everywhere was closed, because as we stepped into this small, only week-old spot, we were greeted with low lights, chill music, and a calm and cool employee that was so helpful in directing us through the counter-service-style ordering.

He helped us decide on a yuzu sesame special ramen that comes with dumplings and smoke, a roasted miso roll, and fried gyoza. The roll showed up first, and my god… Watch out Beyond Sushi, there is a new roll in town! The full-mouth journey of rich umami with complex tang and sweetness coupled with crunch and chew, paired with a delicate smoky charred bottom, was unlike something I have experienced before. My partner had the gyoza so I unfortunately cannot report there, but there were no complaints.

My main was the ramen. I had missed that the special came with smoke, so I was wonderfully surprised when it arrived domed with what I believe was a white oak smoke. My first time having a smoked dish! The noodles were cooked to perfection, the broth was thick and complex and well seasoned. Notably, flavors were not reliant upon a dominance of salt. Instead, elements like subtle chili oil, sweet snappy corn, fresh sprouts, crumbled rich tofu, creamy sesame, and others all sang together! The smoky undertones expanded the earthy heart of the dish.

Everything was so well priced. For the three dishes and a solid tip, we walked out of there for about 50 bucks. Service was fast, kind, and generous. The whole experience inspired this admittedly long and gushing review. I am looking forward to this being a new haunt! The Mac and cheese will be a must next time!
